This sweet lemon and gingerbread loaf is very nice and easy to make.
Ingredients
- 125g butter
- 1/2 cup brown sugar
- 1/2 cup golden syrup
- 1/2 cup milk
- 2 1/2 cup plain flour
- 1 tbs baking powder
- 1 tbs ground ginger
- 1 tbs lemon rind
- 1 tbs lemon juice
- 2 egg
- 1/2 cup water
Lemon icing
- 1 cup icing sugar
- 1 tbs lemon juice
Method

Step 1Melt butter, sugar and golden syrup over low heat. Add milk.

Step 2Sift flour, baking powder and ginger into a bowl. Add lemon rind and juice.

Step 3Add the butter mixture, eggs and ½ cup water to the dry ingredients, mix until just combined.

Step 4Spoon into an 11 x 21 x 7cm loaf tin.

Step 5Bake at 160C for 50 minutes.

Step 6Stand for 5 minutes, allow to cool on a rack.

Step 7Icing: Mix icing ingredients, and spread over loaf.

Step 8Top with shredded lemon rind.

- 1 11cm x 21cm loaf pan
