A particularly delicious accompaniment for fish. The citrus definitely adds a bit of panache to the rice.
Ingredients
- 2 cups water
- 1 tbs butter
- 1 cup rice
- 1 tsp lemon
- 2 tbs lemon juice fresh
- 1/2 cup coriander chopped
Method

Step 1Bring water to a boil. Add rice and butter, stir.

Step 2Reduce heat to low and simmer until rice is tender, for approximately 15 minutes.

Step 3Just before serving, add lemon juice, zest and coriander, mix without breaking up the rice.
Recipe Notes
Lime juice and zest can be used in the place of lemon.
