A lovely thick, tasty mushroom soup, everyone I have made this for loves it. It is quite low in fat too.

Ingredients

  • 8 mushrooms sliced
  • 1 onion sliced
  • 1L vegetable stock (liquid)
  • 1 cup milk
  • 3 tbs plain flour
  • 1/8 tsp thyme
  • 1/4 tsp salt
  • 1/4 tsp pepper

Method

  • Step 1
    Add mushrooms and onions to a large pan with vegetable stock.
  • Step 2
    Heat for about 10-15 minutes or until soft.
  • Step 3
    Melt margarine in a pan, add milk and flour and stir.
  • Step 4
    Add milk mixture to the mushrooms and onions and season.
  • Step 5
    Mix with a hand mixer and serve.
