A lovely thick, tasty mushroom soup, everyone I have made this for loves it. It is quite low in fat too.
Ingredients
- 8 mushrooms sliced
- 1 onion sliced
- 1L vegetable stock (liquid)
- 1 cup milk
- 3 tbs plain flour
- 1/8 tsp thyme
- 1/4 tsp salt
- 1/4 tsp pepper
Method

Step 1Add mushrooms and onions to a large pan with vegetable stock.

Step 2Heat for about 10-15 minutes or until soft.

Step 3Melt margarine in a pan, add milk and flour and stir.

Step 4Add milk mixture to the mushrooms and onions and season.

Step 5Mix with a hand mixer and serve.
