Ingredients

  • 3 cup mashed potato
  • 200 g canned tuna
  • 1 onion finely chopped
  • 2 tsp tom yum paste
  • 1 egg beaten
  • 2 tbs plain flour
  • 1 tbs oil

Method

  • Step 1
    Mix together the potato, tuna, onion.
  • Step 2
    Add Tom Kha paste according to taste.
  • Step 3
    Roll mixture into balls, flatten into patty shape.
  • Step 4
    Coat with the egg and flour, fry in a little oil until brown, turn and brown other side.
  • Step 5
    Serve as a snack, or with salad as a main.
Recipe Notes
I used Tom kha paste. Tom kha paste is available in any Asian supermarket. I usually mix the paste with a small amount of oil to soften it a bit, so that it mixes in better. Great for leftover mashed potato, and the amounts can be as random as you like.
