Ingredients

  • 2 (fillets) chicken thighs cut into strips
  • 170 g 2-minute noodles
  • 4 garlic clove minced
  • 2 cup cabbage shredded
  • 1/2 red capsicum thinly sliced
  • 5 spring onion
  • 6 mushrooms sliced
  • 1/3 cup soy sauce
  • 1 tsp chilli powder
  • 1/4 cup sesame oil
  • 2 tbs olive oil

Method

  • Step 1
    Place chicken in a bowl. Slice spring
  • Step 2
    Add the garlic, chilli powder, soy sauce and the sesame oil and stir to combine the flavours. Allow to rest for at least 15 minutes.
  • Step 3
    Heat a wok or large fry pan. Add the chicken and stir until cooked. Remove from pan and set aside.
  • Step 4
    Place the wok or pan back on the heat. Cook the 2 minute noodles in a saucepan. Reserve flavour sachets.
  • Step 5
    Add the olive oil to the wok or pan, then add the vegetables and flavour sachets.
  • Step 6
    Stir continuously over high heat for 3-4 minutes until cooked.
  • Step 7
    Drain the noodles and add them to the vegetables.
  • Step 8
    Add the chicken back into the pan and stir the mixture. Serve.
Recipe Notes
All vegetables in the recipe can be changed to suit your individual tastes. It would also be quite okay to leave out the chicken to make it vegetarian. I prefer to use Oriental flavoured 2-minute noodles.
