A delicious lamington ice cream slice using only 5 ingredients to keep you cool this summer. No fancy needed to create this little treasure, just patience while it sets in the freezer.
Ingredients
- 250 g chocolate ripple biscuits
- 50 g butter melted
- 600 ml cream
- 395 g sweetened condensed milk
- 350 g (fingers) lamingtons cut into pieces
- 1 chocolate sauce
Method

Step 1Line a slice tin measuring approximately 17cm x 26cm x 4cm with baking paper.

Step 2Crush biscuits in a food processor down to a fine crumb. Add melted butter and stir to combine - mixture should resemble sticky breadcrumbs. Press into prepared tin (the bottom of a glass works a treat). Place in fridge to set.

Step 3Using a food processor or electric mixer whiz the cream and condensed milk together until they just thicken (you don't want to curdle your cream), stir through lamington cubes and pour over prepared biscuit base.

Step 4Cover with foil and freeze for 6 hours or overnight.

Step 5Cut slice into squares, drizzle with chocolate sauce and serve immediately.

Step 6Keep any leftovers in freezer for up to 2 weeks if they last that long!
