Crispy roast potatoes are the best Christmas sides to make and eat. Our tip: make a double batch because these delicious potatoes will be piled on plenty-a-plate this year!
Ingredients
- 75g butter, melted, cooled
- 60ml (¼ cup) extra virgin olive oil
- 4 garlic cloves, crushed
- 1 tbsp chopped fresh thyme leaves
- 60g (3/4 cup) freshly grated parmesan
- 4 potatoes, halved lengthways
Method

Step 1Preheat oven to 200C/180C fan-forced.

Step 2Combine butter, oil, garlic, thyme and parmesan in a large roasting pan. Season.

Step 3Score cut side of potatoes in a crosshatch pattern, cutting 5mm deep. Place potatoes in pan, cut-side down. Brush potato skins with extra oil. Bake for 40 minutes or until potatoes are tender and golden. Serve.
