Crispy roast potatoes are the best Christmas sides to make and eat. Our tip: make a double batch because these delicious potatoes will be piled on plenty-a-plate this year!

Ingredients

  • 75g butter, melted, cooled
  • 60ml (¼ cup) extra virgin olive oil
  • 4 garlic cloves, crushed
  • 1 tbsp chopped fresh thyme leaves
  • 60g (3/4 cup) freshly grated parmesan
  • 4 potatoes, halved lengthways

Method

  • Step 1
    Preheat oven to 200C/180C fan-forced.
  • Step 2
    Combine butter, oil, garlic, thyme and parmesan in a large roasting pan. Season.
  • Step 3
    Score cut side of potatoes in a crosshatch pattern, cutting 5mm deep. Place potatoes in pan, cut-side down. Brush potato skins with extra oil. Bake for 40 minutes or until potatoes are tender and golden. Serve.
