Ingredients

  • 1 tbs olive oil
  • 1 garlic clove crushed
  • 300 g lamb fillet sliced
  • 2 tbs sun-dried tomato chopped
  • 100 g fetta chopped
  • 2 tbs sour cream
  • 1 puff pastry
  • 60 g butter melted
  • 1 tbs poppy seeds
  • 1 sprig fresh rosemary chopped

Method

  • Step 1
    Heat the oil in a pan, add garlic and lamb.
  • Step 2
    Cook lamb until brown.
  • Step 3
    Transfer lamb to a bowl and stir in tomatoes, feta and rosemary.
  • Step 4
    Allow to cool and then stir the cream into the mixture.
  • Step 5
    Cut the pastry diagonally in half to make 2 triangles.
  • Step 6
    Place half the lamb mixture to one side of the triangle.
  • Step 7
    Fold the pastry over the mixture to form a smaller triangle.
  • Step 8
    Brush edges with water and press to seal.
  • Step 9
    Repeat with remaining pastry and mixture.
  • Step 10
    Brush tops with melted butter and sprinkle with poppy seeds.
  • Step 11
    Place triangles on a baking tray and bake in a hot oven for 10-15 minutes or until golden brown.
Recipe Notes

Chopped rosemary can be substituted for a sprig of rosemary laid over the mixture before folding the pastry.

These triangles can be prepared a day ahead and reheated in the oven.
