Lamb shanks in a rich tomato sauce.
Ingredients
- 4 lamb shanks
- 1 onion sliced
- 3 tsp crushed garlic
- 800g canned chopped tomatoes
- 3 tbs tomato paste
- 2 tbs sun-dried tomato pesto
- 2 tsp dried rosemary
- 1 cup water
- 3 beef stock cubes
Method

Step 1In a pan, gently fry onion until soft.

Step 2Add remaining ingredients except the shanks to the pan and then bring to a simmer.

Step 3Once sauce is simmering, place shanks and mixture into a slow cooker, and cook on low for 8 hours.

- 1 slow cooker
Recipe Notes
The sauce is quite rich and I like to serve this dish with spaghetti. Have also served it with mashed potato and vegetables.
