A delicious way to roast vegetables.
Ingredients
- 2 sweet potatoes
- 1 Spanish onion
- 2 carrots large
- 1/2 tsp salt and pepper *to taste
- 2 tbs maple syrup
- 1 tsp oil
Method

Step 1Preheat oven to 200C.

Step 2Chop vegetables into bite size pieces and place into a baking tray lined with baking paper.

Step 3Add maple syrup and a little oil and toss through. Add salt and pepper and toss again.

Step 4Bake for approximately 20 minutes or until golden and tender.

Step 5Serve as a side with roast meat or have as a dish on its own.

Recipe Notes
I pretty much toss in whatever I have in my cupboard. I usually add some rosemary also to give it an earthy flavour. It is even better the next day for a lunch.
