Embrace your inner hipster and start your morning off with this delicious smoothie bowl bursting with this season's freshest blueberries.
Ingredients
Blueberry and acai smoothie
- 2 punnets fresh blueberries
- 200 g unsweetened acai berries, pulp coarsely chopped frozen
- 1 banana coarsely chopped peeled
- 1/3 cup apple juice
- 1 tbs maple syrup *optional
Granola
- 1/4 cup gluten-free rolled oats
- 2 tbs flaked almonds
- 2 tbs macadamias coarsely chopped
- 1/2 tsp ground cinnamon
- 1 tsp coconut oil warmed
- 1 tsp maple syrup
Topping
- 2 tbs pistachios finely chopped
- 2 tbs goji berries
- 2 tsp raw cacao nibs

Step 1Preheat the oven to 180C.

Step 2Granola: Combine all of the ingredients in a small bowl and toss to coat. Spread onto a baking tray. Bake for 10-15 minutes, until golden. Remove from the oven and set aside to cool.

Step 3Blueberry and acai smoothie: Place one-and-a-half punnets of the blueberries in a blender. Add the acai, banana and apple juice. Blend until smooth and creamy. Sweeten with maple syrup, if desired.

Step 4To serve, pour the blueberry and acai smoothie into two wide shallow bowls. Arrange the granola, remaining blueberries and topping ingredients decoratively on top.
