Ingredients

  • 6 eggs
  • 1/2 cup milk
  • 1/4 cup cream (optional)
  • 1 tbsp chives, chopped
  • 1 zucchini, grated
  • 2 shallots, sliced
  • 120g ham, chopped
  • 6 Kraft cheese slices

Method

  • Step 1
    Preheat the oven to 170C. Grease a 28cm quiche or pie dish.
  • Step 2
    In a large bowl, beat together eggs, milk, cream if using, and chives. Season well with salt and pepper. Stir through zucchini.
  • Step 3
    Place half the ham in the base of the pie dish. Top with three slices of cheese and the shallots. Pour over egg mixture, then top with remaining ham, pushing it under the surface of the eggs.
  • Step 4
    Bake for 20 minutes until the eggs have almost set, then top with remaining three slices of cheese and return to the oven for 5-10 minutes until the cheese has melted.
Recipe Notes

You can add veggies of your choice - try diced capsicum, corn or peas.
