This is a lovely dessert to try out on the family or as a special occasion or at dinner party for your friends. This dessert should be served cold.
Ingredients
- 125 g plain flour
- 1 tbs sugar
- 1 egg
- 1 pinch salt
- 1 lemon juiced
- 75 g butter
Topping
- 8 kiwifruit large peeled sliced
- 2 x 85 g lemon jelly
- 300 ml whipped cream
Method

Step 1In a large bowl rub butter into the dry ingredients.

Step 2Using an electric beater, beat sugar, lemon juice and yolk with a little water.

Step 3Add to the dry ingredients and mix until a firm dough is formed.

Step 4Grease a flan dish with cooking spray.

Step 5Roll out pastry to fit flan dish on a lightly floured surface.

Step 6Bake pastry base at 180C for approximately 25 minutes, until golden brown.

Step 7Allow to cool.

Step 8Topping: Sliced kiwi fruit, arrange over pastry base.

Step 9Make lemon jelly according to packet directions.

Step 10Allow to cool but not completely set.

Step 11Pour over kiwi fruit in pastry base.

Step 12Place in refrigerator to set.

Recipe Notes
I suggest you add 1-2 tablespoons of gelatine to the jelly to make it set quicker.
Cook whole kiwi fruits.
Serve with whipped cream.
