A very moist cake.
Ingredients
- 2 cups plain flour
- 1 1/2 tsp baking powder
- 1 tsp bicarbonate of soda
- 1/2 tsp ground cinnamon
- 125 g butter
- 2 tbs honey
- 1 cup caster sugar
- 3/4 cup kiwifruit chopped
- 2 eggs lightly beaten
Cream cheese frosting
- 250 g cream cheese
- 2 tbs caster sugar
- 1 lemon juiced
Method

Step 1Preheat oven to 160C and lightly grease a 23 cm springform pan and line base with paper.

Step 2Sift flour, baking powder, bicarbonate of soda and cinnamon in a bowl and set aside.

Step 3Combine butter, honey and sugar in a large bowl and beat until creamy. Add kiwifruit, eggs and sifted flour. Mix well.

Step 4Spoon into the pan and bake for 40-45 minutes until cooked or a skewer comes out clean.

Step 5Stand for 10 minutes, then cool on rack. Spread the top and sides with frosting and decorate with kiwi slices.

Step 6Cream cheese frosting: Beat the cream cheese until smooth. Add caster sugar and the lemon juice and continue beating until smooth.

Step 7Leave in refrigerator for 30 minutes before spreading on cooled cake.
