Ingredients

  • 1 1/2 cup self-raising flour
  • 60 g butter
  • 1 1/2 tbs milk
  • 1/3 cup sugar
  • 1/2 tsp vanilla essence
  • 1 egg

Lemon icing

  • 3/4 cup icing sugar
  • 2 tbs lemon juice
  • 1/2 tsp lemon rind grated

Method

  • Step 1
    Sift flour and rub in butter until mixture resembles fine breadcrumbs.

    Place milk and sugar into small saucepan. Stir over low heat until sugar has dissolved.
  • Step 3
    Add vanilla, lightly beaten egg and warm milk gradually to flour mixture. Mix well.
  • Step 4
    Turn out onto a lightly floured surface and knead until dough is smooth.
  • Step 5
    Take teaspoons of the dough and roll into a thin roll measuring 13 cm long.
  • Step 6
    Twist 2 rolls together, form a circle and press ends together.
  • Step 7
    Place on lightly greased oven trays.
  • Step 8
    Bake at 180C for 15-20 minutes or until the biscuits are light golden brown.
  • Step 9
    While still warm, dip tops of biscuits into the lemon icing. Leave biscuits to cool on wire racks.
  • Step 10
    Lemon icing: Combine the sifted icing sugar, lemon juice and rind.
  • Step 11
    Beat until mixture is smooth.
Recipe Notes

I made these at school when I was younger, so they are very easy to make and are a good way to help use up a glut of lemons.
