Ingredients

  • 500 g potato
  • 500 g beef steak, minced
  • 1 baby onion
  • 2 cloves garlic clove
  • 4 shallots
  • 1/4 tsp pepper
  • 30 g butter
  • 2 egg separated
  • 1/4 tsp nutmeg
  • 1 1/2 tsp salt
  • 1 cup oil

Method

  • Step 1
    Cook, drain and mash potatoes.
  • Step 2
    Melt butter in frying pan. Add finely chopped onion and crushed garlic. Simmer for 3 to 4 minutes, then add minced steak. Season with salt, pepper and nutmeg.
  • Step 3
    Cook stirring constantly. When meat is half cooked, add finely chopped shallots, including green tops. Remove from heat when meat is cooked.
  • Step 4
    In a bowl combine mashed potatoes with meat mixture and egg yolks. Form mixture into small balls.
  • Step 5
    Refrigerate for 1 hour to firm.
  • Step 6
    Beat egg whites very lightly with fork in small bowl. Dip meat balls one at a time in egg whites.
  • Step 7
    Deep- fry in hot oil until golden brown.

Recipe Notes

These can be prepared in advance and reheated for 10 minutes in a moderate oven.
