In India it's called Torai Masala. It is a lovely mild dish and a great accompaniment but we often eat it as a stand alone or simply with plain rice.
Ingredients
- 1/2 cup red onion chopped
- 3 cloves garlic minced
- 1 celery stick sliced
- 2 tbs oil
- 1/2 tsp ground turmeric
- 1/2 tsp ground cumin
- 3 zucchinis cubed
- 2 1/2 cups tomato puree
- 1 cup frozen peas
- 1 cup green beans
- 1 tsp cayenne pepper
Method

Step 1In a wok, large skillet or saucepan, sauté onions, garlic, and celery in oil for 2 minutes.

Step 2Add turmeric, cumin and zucchini.

Step 3Cook over medium heat for 5 minutes.

Step 4Add tomato sauce, peas and cayenne pepper and cook until zucchini is tender, about 15 minutes.
