This is a really simple alternative to a Rogan Josh - the main difference being that it is a bit heavier on the tomato element and is really wonderfully rich and tantalisingly tasty - a real treat. - Patak's

Ingredients

  • 2 tbs vegetable oil
  • 450 g chicken pieces diced
  • 2 (pods) cardamom
  • 3 tbs Patak's rogan josh Indian curry paste
  • 250 g canned chopped tomato
  • 150 ml water
  • 100 ml pouring cream
  • 50 ml plain yoghurt
  • 2 tbs fresh coriander chopped

Method

  • Step 1
    Heat the oil in a pan and add the Patak's Rogan Josh Curry Paste, green cardamom pods and chicken. Fry on a low heat for 5 minutes until the meat is sealed and coated with the paste.
  • Step 2
    Add the chopped tomatoes and water and bring to the boil, cover and simmer for 10-15 minutes or until the chicken is cooked through.
  • Step 3
    Stir in the single cream and yoghurt and simmer uncovered for a further 2 minutes.
  • Step 4
    Serve on rice, garnished with the fresh coriander.
