This is a really simple alternative to a Rogan Josh - the main difference being that it is a bit heavier on the tomato element and is really wonderfully rich and tantalisingly tasty - a real treat.
Ingredients
- 2 tbs vegetable oil
- 450 g chicken pieces diced
- 2 (pods) cardamom
- 3 tbs Patak's rogan josh Indian curry paste
- 250 g canned chopped tomato
- 150 ml water
- 100 ml pouring cream
- 50 ml plain yoghurt
- 2 tbs fresh coriander chopped
Method

Step 1Heat the oil in a pan and add the Patak's Rogan Josh Curry Paste, green cardamom pods and chicken. Fry on a low heat for 5 minutes until the meat is sealed and coated with the paste.

Step 2Add the chopped tomatoes and water and bring to the boil, cover and simmer for 10-15 minutes or until the chicken is cooked through.

Step 3Stir in the single cream and yoghurt and simmer uncovered for a further 2 minutes.

Step 4Serve on rice, garnished with the fresh coriander.
