A tasty stir-fry.

Ingredients

  • 2 tsp cornflour
  • 1/2 cup chicken stock (liquid)
  • 1/3 cup honey
  • 1 1/2 tbs peanut oil
  • 1 kg green prawns deveined peeled
  • 1 carrot cut diagonally medium peeled
  • 1 garlic clove crushed
  • 2 tsp sesame seeds
  • 150 g snow peas
  • 4 spring onions cut into strips
  • 2 cups rice *to serve

Method

  • Step 1
    Mix cornflour with a little stock until smooth, then stir in remaining stock and honey.
  • Step 2
    Heat wok over medium-high heat and add 1 tablespoon oil.
  • Step 3
    Stir-fry prawns in batches for 2-3 minutes, or until just turning pink, set aside.
  • Step 4
    Heat remaining oil in wok and stir-fry carrots for 3-4 minutes until just tender.
  • Step 5
    Add garlic, honey mixture, sesame seeds and spring onions. Stir-fry for 2 minutes until sauce thickens.

  • Step 6
    Return prawns to wok with snow peas and stir-fry for 2 minutes until prawns are cooked through. Serve with rice.

Recipe Notes

If I don't have snow peas, I use frozen peas.
