A tasty stir-fry.
Ingredients
- 2 tsp cornflour
- 1/2 cup chicken stock (liquid)
- 1/3 cup honey
- 1 1/2 tbs peanut oil
- 1 kg green prawns deveined peeled
- 1 carrot cut diagonally medium peeled
- 1 garlic clove crushed
- 2 tsp sesame seeds
- 150 g snow peas
- 4 spring onions cut into strips
- 2 cups rice *to serve
Method

Step 1Mix cornflour with a little stock until smooth, then stir in remaining stock and honey.

Step 2Heat wok over medium-high heat and add 1 tablespoon oil.

Step 3Stir-fry prawns in batches for 2-3 minutes, or until just turning pink, set aside.

Step 4Heat remaining oil in wok and stir-fry carrots for 3-4 minutes until just tender.

Step 5Add garlic, honey mixture, sesame seeds and spring onions. Stir-fry for 2 minutes until sauce thickens.

Step 6Return prawns to wok with snow peas and stir-fry for 2 minutes until prawns are cooked through. Serve with rice.

If I don't have snow peas, I use frozen peas.
