Ingredients

  • 250 g cooked beef
  • 20 g butter melted
  • 2 shallots finely chopped
  • 1 tbs parsley chopped
  • 2 tbs water
  • 1 beef stock cube
  • 1 tsp plain flour
  • 2 egg beaten
  • 4 potato cooked mashed
  • 40 g butter
  • 2 tbs olive oil

Method

  • Step 1
    Combine meat, butter, shallots, parsley, water and stock cube in a pan. Bring to the boil, lower heat and simmer until water evaporates. Remove from heat and stir in flour and eggs. Mix well, return to heat and stir until thickened. Mix in potatoes, which have been mashed with the extra butter.
  • Step 2
    Spoon mixture into a greased casserole dish and refrigerate overnight to set. Next day, turn out on floured board and roll spoonfuls of mixture into small sausage shapes.
  • Step 3
    Heat oil and fry sausages on both sides until crisp and brown.
Recipe Notes
You can use leftover ham, pork, lamb, chicken or beef to make the sausages. These need to set overnight. Serve either with a meal or have as nibbles at a barbeque.
