Full of vibrant greens, fermented vegetables and haloumi, this bowl is everything I could want in a breakfast and more! I love adding slices of avocado for a boost of healthy fat and a simple boiled egg for extra protein.
Ingredients
- 1 bunch kale small washed shredded
- 1/2 cup frozen peas
- 2 eggs
- 60g haloumi cut into slices
- 2 tbs olive oil
- 1/2 avocado
- 2 tbs fermented vegetables
- 1 pinch sea salt and cracked pepper
- 1 sprinkle sesame seeds *to garnish
Method

Step 1Fill a small pot with water and bring to the boil. Add the eggs and boil for 5-6 minutes, or until cooked to your liking. Remove from the boiling water and allow to cool. Once cooled, peel and set aside.

Step 2Meanwhile, heat a non-stick frying pan over medium heat and add 1 tbs of olive oil. Add the shredded kale and frozen peas, and saute for about 4-5 minutes, or until softened. Season generously and divide into two bowls.

Step 3Return the pan to heat and add the remaining olive oil. Add the sliced haloumi and fry for 2-3 minutes each side. Remove from heat.

Step 4Divide the avocado, fermented vegetables and haloumi between the two bowls. Cut the boiled eggs in half and add one to each bowl. Sprinkle with sesame seeds to garnish.
