Grilled Lemon Chicken with Cream Sauce

Ingredients

  • 6 chicken breast fillet
  • 1 garlic clove crushed
  • 1/2 tsp dried thyme
  • 1/2 tsp dried marjoram
  • 2 tbs parsley chopped
  • 50 g butter
  • 1/4 cup olive oil
  • 1 lemon juiced
  • 1/2 lemon zested
  • 1/4 cup dry white wine
  • 1 tbs brown sugar
  • 200 ml cream
  • 4 cup mixed vegetables steamed

Method

  • Step 1
    Place lemon juice and zest in a large bowl. Add the thyme, marjoram, half the oil, garlic, and half the parsley, and mix well.
  • Step 2
    Add the chicken breasts, mix well and set aside for a couple of hours.
  • Step 3
    In a hot pan, heat olive oil and butter and fry chicken until browned. Set aside in oven to keep hot.
  • Step 4
    Deglaze the pan with the wine.
  • Step 5
    Add the cream and sugar. Season to taste.
  • Step 6
    Simmer until thickened.
  • Step 7
    Serve chicken breasts with vegetables and cream sauce.
Recipe Notes
Use seasonal vegetables e.g. corn, broccoli, asparagus, beans, cauliflower.
