A barbeque favourite.
Ingredients
- 6 chicken breast fillet
- 1 garlic clove crushed
- 1/2 tsp dried thyme
- 1/2 tsp dried marjoram
- 2 tbs parsley chopped
- 50 g butter
- 1/4 cup olive oil
- 1 lemon juiced
- 1/2 lemon zested
- 1/4 cup dry white wine
- 1 tbs brown sugar
- 200 ml cream
- 4 cup mixed vegetables steamed
Method

Step 1Place lemon juice and zest in a large bowl. Add the thyme, marjoram, half the oil, garlic, and half the parsley, and mix well.

Step 2Add the chicken breasts, mix well and set aside for a couple of hours.

Step 3In a hot pan, heat olive oil and butter and fry chicken until browned. Set aside in oven to keep hot.

Step 4Deglaze the pan with the wine.

Step 5Add the cream and sugar. Season to taste.

Step 6Simmer until thickened.

Step 7Serve chicken breasts with vegetables and cream sauce.
Recipe Notes
Use seasonal vegetables e.g. corn, broccoli, asparagus, beans, cauliflower.
