Ingredients

  • 1/2 cup butter, softened
  • 1 cup sugar
  • 3 Weet-Bix crushed
  • 1 tsp golden syrup
  • 1/2 tsp bicarbonate of soda
  • 1 1/2 tbs boiling water
  • 1 cup self-raising flour
  • 1 pinch salt
  • 2 drops vanilla essence
  • 1/2 cup coconut
  • 125 g milk chocolate chips optional

Method

  • Step 1
    Beat butter and sugar, then add vanilla.
  • Step 2
    Melt golden syrup, add water and bicarbonate of soda, then stir into butter mix.
  • Step 3
    Combine flour, coconut and Weet-Bix, then mix in butter mixture. Add choc chips.

  • Step 4
    Place large teaspoonfuls on tray, and bake at 160C for 10-15 minutes or until golden brown. Cool on tray.
