A rich cake packed with fruit and nuts. It makes a great Christmas cake as it looks very festive.
Ingredients
- 1 1/2 cup mixed nuts roughly chopped
- 4 cup mixed dried fruit
- 3/4 cup dried apricots
- 1/2 cup brandy
- 1 cup glace cherries chopped
- 3/4 cup plain flour
- 3/4 cup sugar
- 1/2 tsp baking powder
- 3 egg
- 1 tsp vanilla essence
Method

Step 1Soak the dried fruit in the brandy in a large bowl until soft.

Step 2Add the nuts and cherries.

Step 3Sift dry ingredients together 2 to 3 times and add to the fruit.

Step 4Add beaten eggs and vanilla, and mix well.

Step 5Pour into a greased and lined ring tin.

Step 6Bake in a slow oven for 1½-2 hours.

Step 7Glaze top with warm apricot jam for a shiny finish (optional).

Step 8Slice thinly to serve.
Recipe Notes
I have made this cake every Christmas for nearly 40 years. It is foolproof, delicious and keeps well. The amount of fruit and nuts can be varied. I often just use what is in the pantry - if in doubt check by putting all the dry ingredients in the cake tin first, then add or subtract as necessary. Use nuts any kind. Red, green and yellow glace cherries.
