Ingredients

  • 1 1/2 cup mixed nuts roughly chopped
  • 4 cup mixed dried fruit
  • 3/4 cup dried apricots
  • 1/2 cup brandy
  • 1 cup glace cherries chopped
  • 3/4 cup plain flour
  • 3/4 cup sugar
  • 1/2 tsp baking powder
  • 3 egg
  • 1 tsp vanilla essence

Method

  • Step 1
    Soak the dried fruit in the brandy in a large bowl until soft.
  • Step 2
    Add the nuts and cherries.
  • Step 3
    Sift dry ingredients together 2 to 3 times and add to the fruit.
  • Step 4
    Add beaten eggs and vanilla, and mix well.
  • Step 5
    Pour into a greased and lined ring tin.
  • Step 6
    Bake in a slow oven for 1½-2 hours.
  • Step 7
    Glaze top with warm apricot jam for a shiny finish (optional).
  • Step 8
    Slice thinly to serve.
Recipe Notes
I have made this cake every Christmas for nearly 40 years. It is foolproof, delicious and keeps well. The amount of fruit and nuts can be varied. I often just use what is in the pantry - if in doubt check by putting all the dry ingredients in the cake tin first, then add or subtract as necessary. Use nuts any kind. Red, green and yellow glace cherries.
