These lovely and moist orange muffins are perfect for afternoon tea or in the school lunch box.
Ingredients
- 1 orange
- 150g sugar
- 1 large egg
- 1/2 cup orange juice
- 100g butter melted
- 1 1/2 cups plain flour
- 1 tsp baking powder
- 1 tsp bicarbonate of soda
- 1/2 cup sultanas
Method

Step 1Trim off the thick top and bottom of the orange, so it sits flat.

Step 2Cut the unpeeled orange into quarters, then each quarter into four and remove any seeds.

Step 3Put the chopped orange, including skin, and the sugar into a food processor and process with the metal blade until orange is finely chopped.

Step 4Add the egg, juice, melted butter and process until combined.

Step 5Sift dry ingredients into a large mixing bowl, tip in the orange mixture, then sprinkle sultanas over and fold all together, stopping as soon as ingredients are moistened.

Step 6Spoon mixture into a 12-hole muffin pan lined with paper muffin cases, and bake at 200C (fan-forced) for 14 minutes or until golden brown.

Step 7When cool, sprinkle with icing sugar to decorate.
