Ingredients

  • 4 tbs butter softened
  • 1/2 cup white sugar
  • 1 egg
  • 3/4 cup self-raising flour
  • 1/4 cup Yoplait low-fat plain yoghurt
  • 1/4 cup lemon juice

Method

  • Step 1
    Cream butter and sugar until smooth, then mix in egg.
  • Step 2
    Sift flour into butter mixture and combine well.
  • Step 3
    Add yoghurt and juice, and mix until combined.
  • Step 4
    Fill the mini muffin tin 3/4 full with mixture.
  • Step 5
    Bake at 180C for 10-15 minutes until cooked.
Recipe Notes

You can use butter or margarine.

Add 2 tablespoons of grated lemon zest for an extra lemony tang.
