These little muffins are not overly sweet with a delicious tang.
Ingredients
- 4 tbs butter softened
- 1/2 cup white sugar
- 1 egg
- 3/4 cup self-raising flour
- 1/4 cup Yoplait low-fat plain yoghurt
- 1/4 cup lemon juice
Method

Step 1Cream butter and sugar until smooth, then mix in egg.

Step 2Sift flour into butter mixture and combine well.

Step 3Add yoghurt and juice, and mix until combined.

Step 4Fill the mini muffin tin 3/4 full with mixture.

Step 5Bake at 180C for 10-15 minutes until cooked.
Recipe Notes
You can use butter or margarine.
Add 2 tablespoons of grated lemon zest for an extra lemony tang.
