The biggest tip we have when it comes to our gluten-free zucchini slice recipe is to squeeze out the water from the zucchini after grating. This will stop your slice getting soggy. Other than this, this recipe is fairly straightforward.
What goes into our gluten-free zucchini slice recipe?
The big substitute in this recipe — making it gluten free — is the gluten-free flour. You should be able to get this at the supermarket without too much hassle. This recipe also includes bacon, but if you’re looking for a vegetarian alternative, you can of course just leave it out.

Ingredients
- 5 eggs
- 1/3 cup cottage cheese
- 1/4 cup vegetable oil
- 1 cup gluten-free self-raising flour
- 400g zucchini, grated, squeezed of excess moisture
- 1 brown onion, finely chopped
- 1 clove garlic, crushed
- 2 middle bacon rashers, finely chopped
- 1 cup grated cheese

Step 1Preheat oven to 175°C. Line an 18cm x 28cm slice tin with baking paper.

Step 2Whisk eggs, cottage cheese and oil together in a large bowl. Whisk in gluten free flour. Fold through zucchini, onion, garlic, bacon and cheese. Season well with salt and pepper.

Step 3Pour into prepared tin and level top. Bake for 30-35 minutes until set and golden.

Step 4Allow to cool slightly in the tin, then slice into squares and serve.

You absolutely can. Just omit the bacon for a vegetarian version of this gluten-free zucchini slice.

This slice can be stored in an airtight container in the fridge for up to 4 days or in the freezer for up to 3 months. It reheats really well in the oven or microwave, so you can plan ahead. It’s especially delicious seared in a frying pan to make the edges crispy.
