When it comes to lunch box snacks, it’s hard to go past the humble zucchini slice. A recipe passed down through the generations, the zucchini slice is just one we keep coming back to. Sure, it’s mostly healthy and easy to make, but the thing we really love is that it’s also completely delicious and sure to keep every single member of the family satisfied. We love zucchini slice so much that we think it should be available to as many people as possible, so this is our recipe specifically for our gluten-free friends.

How to make gluten-free zucchini slice: key tips

The biggest tip we have when it comes to our gluten-free zucchini slice recipe is to squeeze out the water from the zucchini after grating. This will stop your slice getting soggy. Other than this, this recipe is fairly straightforward.

What goes into our gluten-free zucchini slice recipe?

The big substitute in this recipe — making it gluten free — is the gluten-free flour. You should be able to get this at the supermarket without too much hassle. This recipe also includes bacon, but if you’re looking for a vegetarian alternative, you can of course just leave it out.
