I created this recipe as the books I followed always seem to have a crumbly result. These taste yum!
Ingredients
- 120 g butter softened
- 1 cup brown sugar
- 1 tsp vanilla extract
- 1 cup almond meal
- 1/2 cup gluten-free self-raising flour
- 1/2 cup gluten-free plain flour
- 1 cup coconut flakes
- 1 egg
Method

Step 1Preheat oven to 150C fan forced.

Step 2Mix brown sugar, butter and vanilla untill smooth, then add egg until light and fluffy.

Step 3Add almond meal, then add flours and coconut. Mix well into dough.

Step 4Roll out dough and cut into which ever shape is preferred.

Step 5Place onto biscuit trays, baking paper recommend. Bake for 8 minutes.
