I got this recipe from my friends mum and they are, by far, the easiest and best gingernuts I have ever tasted. - Mr Squiggle

Ingredients

  • 1 cup plain flour
  • 1 tsp baking powder
  • 1 tbs ground ginger
  • 4 tbs brown sugar
  • 1 tbs golden syrup
  • 4 tbs margarine

Method

  • Step 1
    Preheat oven to 180C. Line 2 baking trays with baking paper.
  • Step 2
    Combine first 3 ingredients in a mixing bowl.

    Put margarine, brown sugar and golden syrup together in a microwave safe jug and microwave on high for approximately 1 minute or until melted. Add to dry ingredients and mix into a soft dough.
  • Step 4
    Roll into small teaspoon sized balls and place on baking trays pressing down with a fork. Allow a little room for spreading.
  • Step 5
    Bake for approximately 15 minutes or until just starting to brown.
  • Step 6
    Allow to cool on trays.

  • 2 baking tray
Recipe Notes

Will harden on standing. Use gluten free flour instead for a gluten free version. These are quite gingery but that is how I like them. Just alter the amount of ground ginger to suit your taste.
