I got this recipe from my friends mum and they are, by far, the easiest and best gingernuts I have ever tasted.
Ingredients
- 1 cup plain flour
- 1 tsp baking powder
- 1 tbs ground ginger
- 4 tbs brown sugar
- 1 tbs golden syrup
- 4 tbs margarine
Method

Step 1Preheat oven to 180C. Line 2 baking trays with baking paper.

Step 2Combine first 3 ingredients in a mixing bowl.

Step 3Put margarine, brown sugar and golden syrup together in a microwave safe jug and microwave on high for approximately 1 minute or until melted. Add to dry ingredients and mix into a soft dough.

Step 4Roll into small teaspoon sized balls and place on baking trays pressing down with a fork. Allow a little room for spreading.

Step 5Bake for approximately 15 minutes or until just starting to brown.

Step 6Allow to cool on trays.

Recipe Notes
Will harden on standing. Use gluten free flour instead for a gluten free version. These are quite gingery but that is how I like them. Just alter the amount of ground ginger to suit your taste.
