A delicious gingerbread loaf to enjoy at Christmas.
Ingredients
- 2 cups self-raising flour
- 1 pinch salt
- 1 tbs ground ginger
- 1 tbs ground cinnamon
- 2 eggs
- 1/2 cup sugar
- 100 g butter
- 2 tbs golden syrup
- 3/4 cup natural yoghurt
- 1/2 cup sultanas
Method

Step 1Sift flour, salt, ginger and cinnamon into a bowl.

Step 2In a separate bowl, beat eggs and sugar until thick and pale.

Step 3Melt butter and golden syrup, and cool slightly, then add to the egg mixture.

Step 4Fold in the dry ingredients, and then stir in the yoghurt and sultanas until well combined.

Step 5Spoon mixture into a greased 22cm loaf pan.

Step 6Bake at 180C for 45-50 minutes.

Step 7Leave in tin for 10 minutes before turning out onto a wire rack.
