Lamb Meatballs with Tomato and Herb Sauce

Ingredients

Meatballs

  • 500 g lamb mince
  • 1 egg
  • 1/4 cup fresh breadcrumbs
  • 1 tsp garlic crushed
  • 1 oil spray
  • 1 pinch salt and pepper *to taste

Tomato sauce

  • 375 g tomato puree
  • 2 tbs tomato paste
  • 1 tsp garlic crushed
  • 1 bunch oregano fresh small
  • 1 bunch thyme fresh small
  • 1 onion finely diced
  • 1/2 tsp olive oil
  • 1 pinch salt and pepper *to taste

Method

  • Step 1
    Mix meatball ingredients together. Roll meatballs into walnut-size balls.
  • Step 2
    Spray pan with oil and fry meatballs on high heat until browned. Remove from pan.
  • Step 3
    Sauté onion and garlic in olive oil until onion is see-through, then add remaining sauce ingredients.
  • Step 4
    Place meatballs back into pan with sauce and simmer for ten minutes, whilst cooking the spaghetti.
Recipe Notes

This recipe is also nice with some red wine in the sauce, chilli or fresh basil if you have it.

Serve with crusty garlic bread and garden salad.
