How to make garlic prawns: key tips

Garlic adds wonderful flavour to prawns and makes the perfect marinade. After coating your prawns in the garlic mixture, you can leave them to marinate for 10-20 minutes. When marinating prawns, it’s best to avoid marinating them for long periods of time, as this can affect the texture of the prawns.

Cook the marinated prawns, turning, over medium-high heat until they just change colour all over. This will mean they are cooked through but still juicy. Cooking prawns for too long can cause them to dry out and lose a lot of their gorgeous flavour.

As they’re being cooked and not simply heated through, you will want to purchase green prawns. You can use super fresh prawns or frozen thawed prawns, it’s up to you.

Choose garlic that is lovely and fresh. Older garlic that is soft or sprouting can produce a more pungent or bitter flavour, which is not ideal in this dish where garlic is a star.

Go for a dry white wine, such as pinot gris/grigio or chardonnay. The wine will mellow the garlic and add flavour and moisture to the dish.

Ingredients

  • 1 tbs olive oil
  • 3 cloves garlic crushed
  • 1 tsp salt
  • 1/4 cup white wine
  • 1 kg green prawns deveined peeled
  • 1 tbs butter
  • 1 tsp black pepper *to taste

Method

  • Step 1
    Place oil, garlic, pepper and wine in a bowl.

    Heat butter in non-stick frying pan.
  • Step 4
    Add prawns and cook over high heat for about 4-5 minutes or until prawns are white.

How else can I serve these garlic prawns?

These garlic prawns make great canapés for a party or barbecue. Keep the tails on the prawns and cook as per the recipe. Place all the cooked prawns on a serving platter and serve warm with either a bowl of sweet chilli sauce for dipping, a seafood sauce (rose marie), or a dill mayonnaise.

How do I devein prawns?

Use your fingers to peel off the legs and then the shell (you can leave the tail on or pinch it to remove). Make a shallow cut along the prawn’s back using a small sharp knife. The dark ‘vein’ should be visible and can be easily removed with a knife or your fingers.
