Garlic Lemon Crumbed Chicken Breasts

Ingredients

  • 4 chicken breast fillet sliced
  • 1 garlic clove crushed
  • 1/4 tsp lemon rind, finely grated
  • 1 lemon juiced
  • 3 tbs olive oil
  • 1 cup dried breadcrumbs

Method

  • Step 1
    Mix all ingredients except chicken and breadcrumbs in a bowl.
  • Step 2
    Add chicken and coat each slice in mixture, making sure to get it all over chicken.
  • Step 3
    Allow to marinate for approximately 1 hour, not too long or the juice will start cooking the chicken.
  • Step 4
    In a large dish add crumbs then one piece of chicken at a time, coat each fillet well, ensuring no missed spots, press on well and chill for an hour.
  • Step 5
    Pan fry in butter.
Recipe Notes

Great with a salad or cold in a picnic basket.
