Easy, tasty and quick.
Ingredients
- 4 chicken breast fillet sliced
- 1 garlic clove crushed
- 1/4 tsp lemon rind, finely grated
- 1 lemon juiced
- 3 tbs olive oil
- 1 cup dried breadcrumbs
Method

Step 1Mix all ingredients except chicken and breadcrumbs in a bowl.

Step 2Add chicken and coat each slice in mixture, making sure to get it all over chicken.

Step 3Allow to marinate for approximately 1 hour, not too long or the juice will start cooking the chicken.

Step 4In a large dish add crumbs then one piece of chicken at a time, coat each fillet well, ensuring no missed spots, press on well and chill for an hour.

Step 5Pan fry in butter.
