Add a special touch to your Christmas feast with this fruity ice-cream pudding.
Ingredients
- 2 cups fruit mince
- 1 L vanilla ice cream
Method

Step 1Line a 6 cup mould with foil and chill in freezer.

Step 2Place ice cream in a bowl and leave to soften slightly. Mix in fruit mince.

Step 3Spoon ice cream into basin and press down to flatten. Cover with plastic wrap and freeze several hours or overnight.

Step 4Turn out onto plate and slice to serve.
