This is a low-fat fruit mince that is quick and easy to make and keeps for at least 6 months in the fridge...if it lasts that long. - cookie1

Ingredients

  • 1 cup dry apple cider
  • 1 1/2 cups brown sugar firmly packed
  • 1 kg apples cored diced peeled
  • 1 tsp mixed spice
  • 1/2 tsp ground cinnamon
  • 250 g raisins
  • 125 g sultanas
  • 125 g currants
  • 1/3 cup mixed peel
  • 125 g glace cherries halved
  • 1/2 cup hazelnuts chopped
  • 1 orange juiced peeled
  • 2 tbs brandy

Method

  • Step 1
    Heat cider and brown sugar, stirring to dissolve the sugar.
  • Step 2
    Add all other ingredients except the brandy.
  • Step 3
    Partially cover and simmer gently for about 40 minutes until the apples are pulpy and the liquid is absorbed.
  • Step 4
    Remove from the heat and stir in brandy.
  • Step 5
    Put in clean, warm jars.

  • 2 glass jar with lid
Recipe Notes

This is delicious for fruit mince tarts and other recipes that call for fruit mince.

Use hazelnuts or almonds.

It is also nice over ice cream.

Cover and store up to 6 months (I find it is best if kept in the fridge).
