Ingredients

  • 3 sheets puff pastry
  • 2 1/2 cup fruit mince
  • 1 egg whites lightly beaten
  • 2 tbs caster sugar

Method

  • Step 1
    Preheat fan forced oven to 180C degrees. Grease a rectangular 35cm x 13cm loose bottomed flan pan.
  • Step 2
    Lay two sheets of puff pastry over bottom of tin. Press sheet into sides and base of pan and trim away any excess pastry.
  • Step 3
    With third pastry sheet, cut out small star shapes using a cookie cutter.
  • Step 4
    Spoon pre-made fruit mince onto pastry. Gently press into pan and smooth top.
  • Step 5
    Add pastry stars. Brush with egg whites and sprinkle caster sugars over stars.
  • Step 6
    Bake for 30 minutes or until pastry is golden. Allow to cool in tin. Serve warm or cool.
