A warm dessert that can be enjoyed by all.
Ingredients
- 1 1/2 cups icing sugar
- 1/2 cup plain flour sifted
- 1 1/4 cups cashew meal
- 200 g unsalted butter
- 1/4 tsp lemon zest
- 3 eggs whisked
- 100 g fresh blueberries
- 50 g Pauls thick custard
Method

Step 1Preheat the oven to 180C degrees. Grease a 12-hole friand pan.

Step 2In a saucepan, melt the butter and set aside to cool.

Step 3In a bowl, add the icing sugar, cashew meal and sifted flour. Add the cooled butter, lemon zest and whisked eggs and mix.

Step 4Divide the mixture among the friand pan. Place the blueberries among each friand.

Step 5Bake for 20 minutes and set aside to cool for 5 minutes.

Step 6Place the custard in a piping bag and gently pipe the custard into the friand.

Step 7Dust with extra icing sugar and serve warm.
