Ingredients

  • 1 1/2 cups icing sugar
  • 1/2 cup plain flour sifted
  • 1 1/4 cups cashew meal
  • 200 g unsalted butter
  • 1/4 tsp lemon zest
  • 3 eggs whisked
  • 100 g fresh blueberries
  • 50 g Pauls thick custard

Method

  • Step 1
    Preheat the oven to 180C degrees. Grease a 12-hole friand pan.
  • Step 2
    In a saucepan, melt the butter and set aside to cool.
  • Step 3
    In a bowl, add the icing sugar, cashew meal and sifted flour. Add the cooled butter, lemon zest and whisked eggs and mix.
  • Step 4
    Divide the mixture among the friand pan. Place the blueberries among each friand.
  • Step 5
    Bake for 20 minutes and set aside to cool for 5 minutes.
  • Step 6
    Place the custard in a piping bag and gently pipe the custard into the friand.
  • Step 7
    Dust with extra icing sugar and serve warm.
