Ingredients

  • 120g butter
  • 2 eggs
  • 60g plain flour
  • 120g self-raising flour
  • 200g caster sugar
  • 125ml milk
  • 1/2 tsp salt
  • 2 tsp lemon rind
  • 100g caster sugar *extra
  • 60ml lemon juice

Method

  • Step 1
    Cream butter and sugar until light and fluffy.

    Add eggs, one at a time, beating well after each addition.
  • Step 3
    Sift flours and salt, and add alternately with milk.
  • Step 4
    Add lemon rind.
  • Step 5
    Pour into greased 20cm x 10cm loaf tin and bake at 180C for 40-45 minutes.
  • Step 6
    Mix lemon juice with extra sugar. Stir until sugar dissolves.
  • Step 7
    When the cake is cooked and hot from the oven, pour over the lemon mixture.
  • Step 8
    Leave to cool in the tin.
