I have been making this cake for many years. It's plain, but delicious.
Ingredients
- 120g butter
- 2 eggs
- 60g plain flour
- 120g self-raising flour
- 200g caster sugar
- 125ml milk
- 1/2 tsp salt
- 2 tsp lemon rind
- 100g caster sugar *extra
- 60ml lemon juice
Method

Step 1Cream butter and sugar until light and fluffy.

Step 2Add eggs, one at a time, beating well after each addition.

Step 3Sift flours and salt, and add alternately with milk.

Step 4Add lemon rind.

Step 5Pour into greased 20cm x 10cm loaf tin and bake at 180C for 40-45 minutes.

Step 6Mix lemon juice with extra sugar. Stir until sugar dissolves.

Step 7When the cake is cooked and hot from the oven, pour over the lemon mixture.

Step 8Leave to cool in the tin.
