Sweet, zesty and buttery, this lemon slice  gets wolfed down whenever I serve it up at a morning or afternoon tea. With a super easy melt-and-mix base and a simple glaze icing, there’s no need to turn on the oven for this cheats lemon slice as it just sets in the fridge. Perfect for summer entertaining. 

How to make our no-bake lemon slice: key tips

Make sure your biscuits are well and truly blitzed because if there are bigger pieces the base won’t hold together as well. Although you can go old-school – and just place them in a bag and bash with a rolling pin – a food processor is the most useful way of creating the fine crumbs. Add the condensed milk last. Half a can is a bit of an estimate. Just add enough for the mixture to come together. Give it a bit of a squeeze with your hands, if it holds together you’ve nailed it.

Our recipe writer suggests using Marie biscuits they are a great all rounder, you could also use Nice or granitas. Using straight up icing sugar means the icing will set more firmly than icing sugar mixture.

Ingredients

  • 250 g sweet plain biscuits
  • 125g Woolworths Essentials Unsalted Butter, melted
  • 3/4 cup coconut
  • 1/2 can NESTLE Sweetened Condensed Milk
  • 1 lemon zested

Icing

  • 2 cups icing sugar
  • 1 1/2 tbs Lurpak* Butter, melted
  • 1/2 cup lemon juice *to taste

Method

  • Step 1
    Crush biscuits and mix in coconut.

    Add finely grated lemon rind and mix.
  • Step 3
    Combine melted butter and condensed milk and add to dry mixture. Stir well.
  • Step 4
    Press into a lined slice tin and set in fridge.

    Icing: Mix all icing ingredients (with lemon juice to taste) and ice when cooled.

How long does lemon slice last?

The answer is not long. But if you do have leftovers, it will keep in the fridge for up to 5 days. Lemon slice also freezes well. It can be frozen whole, or in individual pieces, for up to 2 months. To thaw, leave the slice at room temperature for around 30 minutes before eating.
