A family favourite.
Ingredients
- 2 kg frozen potato chips
- 500 g smoked ham (deli) diced
- 6 egg lightly beaten
- 600 ml thickened cream
- 1/2 cup milk
- 1/2 tsp salt
- 1/2 tsp white pepper
- 2 green onion sliced
- 1 cup tasty cheese
- 1 red capsicum cut into pieces
- 3/4 cup fresh breadcrumbs
Method

Step 1Preheat oven to 170C degrees.

Step 2Spray oven dish with oil and sprinkle bottom and all sides with bread-crumbs.

Step 3Layers potato chips, smoked ham, cheese, green onion (green part only) and capsicum. Season with salt and pepper. Repeat with remaining ingredients until all used, finishing with potatoes as final layer.

Step 4In a medium bowl mix together thickened cream with milk and eggs. Pour over potatoes.Gently press the potatoes down.Cover with aluminium foil and bake in preheat oven for 40 minutes or until the milk mixture evaporates.The last 20 minutes, remove foil and bake until the top is golden brown. Serve on it's own with vegetable, salad or any cooked meat.
