Sweet Chilli Beef Stir-Fry

Ingredients

  • 400 g beef stir-fry strips aged
  • 1 tbs oil
  • 400 g Hokkien noodle
  • 1 red onion cut into wedges medium
  • 1 carrot cut diagonally cut in half
  • 1/2 red capsicum sliced
  • 1 cup snow peas cut diagonally thinly sliced trimmed

Sauce

  • 2 tbs hoisin sauce
  • 2 tbs soy sauce
  • 2 tbs mirin
  • 1 tbs sesame oil
  • 1 red chilli diced seeds removed

Method

  • Step 1
    Combine sauce ingredients in small bowl.
  • Step 2
    Prepare noodles as per packet instructions
  • Step 3
    Heat ½ oil in wok over medium-high heat.
  • Step 4
    Cook beef in batches until nicely browned. Transfer to bowl.
  • Step 5
    Heat remaining oil in wok. Add onion, carrot and capsicum. Stir fry 2-3 minutes or until softened.
  • Step 6
    Return beef and any juices to wok. Stir.
  • Step 7
    Add sauce and snow peas. Stir fry until sauce is heated through.
  • Step 8
    Place noodles in bowls and top with stir fry. Serve immediately.
Recipe Notes

Sweet sherry can be used instead of mirin seasoning.

Add more or less chilli to suit your taste.

Add noodles to wok with the marinade in last step if desired.
