French onion impossible quiche

A delicious onion-y quiche where the pastry base magically appears while baking - impossibly easy!

Ingredients

  • 2 tsp olive oil
  • 2 medium brown onions, sliced
  • 1 tbsp brown sugar
  • 1 tsp balsamic vinegar
  • 5 eggs
  • 1 1/2 cups milk
  • 1/3 cup self-raising flour
  • 2 tsp French onion soup mix
  • 1 cup grated tasty cheese
  • 1 tbsp parsley, chopped

Method

  • Step 1
    Heat oil in a small saucepan. Add onions and cook over low heat with a lid on for 10 minutes, stirring often, until very soft and starting to caramelise. Add sugar and vinegar and cook for a further 5 minutes. Set aside to cool.
  • Step 2
    Preheat oven to 180C fan-forced. Grease a deep 24cm pie dish.
  • Step 3
    In a large bowl, whisk eggs and milk. Whisk in flour and soup mix until smooth. Stir through cheese, parsley and caramelised onions. Pour into prepared dish.
  • Step 4
    Bake for 35 minutes until quiche has just set. Allow to cool slightly before slicing and serving. Watch our step-by-step video below to see how to make the French onion impossible quiche recipe.

Recipe Notes

I used my ceramic fluted deep pie dish. You could use any solid oven-proof dish - a loose-bottom flan dish won’t work!

You should have about 1 cup of cooked onions.
