A delicious onion-y quiche where the pastry base magically appears while baking - impossibly easy!
Ingredients
- 2 tsp olive oil
- 2 medium brown onions, sliced
- 1 tbsp brown sugar
- 1 tsp balsamic vinegar
- 5 eggs
- 1 1/2 cups milk
- 1/3 cup self-raising flour
- 2 tsp French onion soup mix
- 1 cup grated tasty cheese
- 1 tbsp parsley, chopped
Method

Step 1Heat oil in a small saucepan. Add onions and cook over low heat with a lid on for 10 minutes, stirring often, until very soft and starting to caramelise. Add sugar and vinegar and cook for a further 5 minutes. Set aside to cool.

Step 2Preheat oven to 180C fan-forced. Grease a deep 24cm pie dish.

Step 3In a large bowl, whisk eggs and milk. Whisk in flour and soup mix until smooth. Stir through cheese, parsley and caramelised onions. Pour into prepared dish.

Recipe Notes
I used my ceramic fluted deep pie dish. You could use any solid oven-proof dish - a loose-bottom flan dish won’t work!
You should have about 1 cup of cooked onions.
