Ingredients

  • 1.5 cups plain flour
  • 3 tbsp caster sugar
  • 3 tsp baking powder
  • 1/2 tsp salt
  • 2 eggs
  • 1 tbsp olive oil
  • 2/3 cup milk
  • 2-3 apples, peeled, cored and diced
  • Vegetable oil for deep-frying

For cinnamon sugar

  • 1/2 cup caster sugar
  • 1 tbsp ground cinnamon

Method

  • Step 1
    In a bowl, whisk together flour, sugar, baking powder and salt. In a separate bowl or jug, whisk together eggs, olive oil and milk. Pour into dry ingredients and whisk until smooth. Fold through diced apples.
  • Step 2
    To make cinnamon sugar, combine sugar with cinnamon and set aside in a medium bowl.
  • Step 3
    Heat oil in a large saucepan until it reaches 190C measured on a sugar or meat thermometer. Use a tablespoon size spoon or ice-cream or cookie scoop to drop spoonfuls of batter into the hot oil, working in batches so as not to overcrowd the pan. Cook for 3-4 minutes each, turning halfway through. Remove with a slotted spoon and drain on paper towel, then place in the bowl with the cinnamon sugar and toss to coat.
  • Step 4
    Repeat with remaining batter. Serve with custard or caramel sauce.
Recipe Notes

These are best enjoyed straightaway while hot and crispy, but they keep well in an airtight container for a couple of days.

Dice the apple no larger than 1cm to give it a chance to cook in the batter.

Oil can be cooled, strained and reused.
