Don’t let the deep-frying turn you off - these fluffy apple fritters are so easy to make and the result is more delicious than anything you can find at the doughnut shop.
Ingredients
- 1.5 cups plain flour
- 3 tbsp caster sugar
- 3 tsp baking powder
- 1/2 tsp salt
- 2 eggs
- 1 tbsp olive oil
- 2/3 cup milk
- 2-3 apples, peeled, cored and diced
- Vegetable oil for deep-frying
For cinnamon sugar
- 1/2 cup caster sugar
- 1 tbsp ground cinnamon
Method

Step 1In a bowl, whisk together flour, sugar, baking powder and salt. In a separate bowl or jug, whisk together eggs, olive oil and milk. Pour into dry ingredients and whisk until smooth. Fold through diced apples.

Step 2To make cinnamon sugar, combine sugar with cinnamon and set aside in a medium bowl.

Step 3Heat oil in a large saucepan until it reaches 190C measured on a sugar or meat thermometer. Use a tablespoon size spoon or ice-cream or cookie scoop to drop spoonfuls of batter into the hot oil, working in batches so as not to overcrowd the pan. Cook for 3-4 minutes each, turning halfway through. Remove with a slotted spoon and drain on paper towel, then place in the bowl with the cinnamon sugar and toss to coat.

Step 4Repeat with remaining batter. Serve with custard or caramel sauce.
Recipe Notes
These are best enjoyed straightaway while hot and crispy, but they keep well in an airtight container for a couple of days.
Dice the apple no larger than 1cm to give it a chance to cook in the batter.
Oil can be cooled, strained and reused.
