This is a very delicious loaf but you must use the sauce to keep it moist - oldsheila

Ingredients

  • 10 potato cooked mashed
  • 2 tbs butter
  • 1 onion finely chopped
  • 2 tbs parsley chopped
  • 500 g white fish fillet
  • 1 tbs water
  • 1 egg whites beaten

Sauce

  • 3 tbs butter
  • 1 onion finely chopped
  • 1 garlic clove minced
  • 1/2 cup tomato sauce
  • 1/2 cup water
  • 1 tsp Worcestershire sauce
  • 1 tbs white vinegar
  • 3/4 tsp sugar

Method

  • Step 1
    Preheat oven to 190C.
  • Step 2
    Season mashed potatoes with with salt and pepper.
  • Step 3
    Melt butter in fry-pan and saute onion, parsley and fish.
  • Step 4
    Stir mixture into mashed potato.
  • Step 5
    Place into a lightly greased bread tin, or roll on a sheet of waxed paper to shape. Remove waxed paper when shaped.
  • Step 6
    In a bowl add a small amount of water to beaten egg and coat log.
  • Step 7
    Bake for 20 minutes or until golden.
  • Step 8
    Sauce: In a saucepan, melt butter and saute onion and garlic.
  • Step 9
    Add other ingredients and let mixture simmer for approximately 30 minutes.
Recipe Notes
You can use frozen fish if you wish. Serve with the sauce. Serve with a cucumber salad, fried potatoes and onions.
