This is a very delicious loaf but you must use the sauce to keep it moist
Ingredients
- 10 potato cooked mashed
- 2 tbs butter
- 1 onion finely chopped
- 2 tbs parsley chopped
- 500 g white fish fillet
- 1 tbs water
- 1 egg whites beaten
Sauce
- 3 tbs butter
- 1 onion finely chopped
- 1 garlic clove minced
- 1/2 cup tomato sauce
- 1/2 cup water
- 1 tsp Worcestershire sauce
- 1 tbs white vinegar
- 3/4 tsp sugar
Method

Step 1Preheat oven to 190C.

Step 2Season mashed potatoes with with salt and pepper.

Step 3Melt butter in fry-pan and saute onion, parsley and fish.

Step 4Stir mixture into mashed potato.

Step 5Place into a lightly greased bread tin, or roll on a sheet of waxed paper to shape. Remove waxed paper when shaped.

Step 6In a bowl add a small amount of water to beaten egg and coat log.

Step 7Bake for 20 minutes or until golden.

Step 8Sauce: In a saucepan, melt butter and saute onion and garlic.

Step 9Add other ingredients and let mixture simmer for approximately 30 minutes.
Recipe Notes
You can use frozen fish if you wish. Serve with the sauce. Serve with a cucumber salad, fried potatoes and onions.
