The perfect one pot dish to satisfy the whole family.
Ingredients
- 1 tbs oil
- 500 g chicken thighs diced
- 200 g chorizo sausage sliced
- 1 onion diced large
- 1/2 red capsicum diced
- 2 garlic clove diced
- 1/2 tsp ground turmeric
- 1/2 tsp ground cumin
- 1 cup rice
- 375 g enchilada sauce
- 4 cups chicken stock (liquid)
- 1 cup frozen peas
- 270 g canned corn drained
Method

Step 1Heat oil in large frypan. Add chicken and cook until brown.

Step 2Add chorizo sausage, onion, capsicum and garlic. Sauté gently.

Step 3Add turmeric, cumin, rice, enchilada sauce and stock.

Step 4Cover and gently simmer until rice is tender and has absorbed the liquid, stirring occasionally during the cooking process so the rice does not stick to the frypan.

Step 5Add more liquid if mixture is drying out.

Step 6Add peas and corn and stir through mixture. Cook a further 5 minutes.
