How to make this favourite hedgehog slice: key tips
In step 4, the mixture can be a tad difficult to stir, so simply use your hands to combine the crushed biscuit with the other ingredients.
Use a regular 16cm x 26cm slice pan for this recipe. Once you transfer the mixture from the bowl to the pan, you can place a sheet of baking paper on top and use your hands to smooth the surface of the slice.
Your finished slice needs to go into the fridge for around 3 hours to set firm, before cutting it into pieces.

Ingredients
- 190g butter
- 1 cup caster sugar
- 3 tbs cocoa
- 3 tbs coconut plus extra to sprinkle
- 1 egg lightly beaten large
- 150 g Californian walnuts finely chopped
- 1 tsp vanilla extract
- 1/4 tsp ground cinnamon
- 250 g Marie biscuits crushed
Glace Icing
- 1 cup icing sugar
- 1 tbs cocoa
- 1 1/2 tbs water
Method

Step 1In a medium sized bowl, melt butter in microwave then add sugar and cocoa and mix well.

Step 2Add coconut and chopped walnuts and mix well.

Step 3Add beaten egg, vanilla and cinnamon and mix well.

Step 4Place crushed biscuits in a large mixing bowl and add the above mixture, mixing well.

Step 5Firmly press hedgehog mixture into a greased and lined slice tin and place in fridge.

Step 6Glace Icing: Sift icing sugar and cocoa into a bowl and mix in enough of the water to make a firm icing.

Step 7Spread over hedgehog slice and sprinkle with coconut. Refrigerate until set.

Step 8When set, cut into slices.

How do I crush the biscuits for this favourite hedgehog slice?
Leave the food processor in the cupboard as it would make the crumbs too fine. Instead, place the biscuits into a freezer bag or sealable bag and crush with the side of a rolling pin. You want a combination of fine and chunky crumbs.
Can I freeze this hedgehog slice?
This slice is freezer-friendly, so make extra and freeze the pieces in an airtight container for up to 3 months. Thaw in the fridge before eating.
