Enough for everyone and very easy to make.
Ingredients
- 2 cup water
- 3 cup caster sugar
- 250 g butter
- 1/3 cup cocoa powder
- 1 tsp bicarbonate of soda
- 3 cup self-raising flour
- 4 egg
Fudge Frosting
- 1/3 cup water
- 1/2 cup caster sugar
- 1/3 cup cocoa powder
- 1 cup icing sugar
- 90 g butter
Method

Step 1Preheat oven to 180C and grease and line a 26 x 33 cm baking dish.

Step 2Stir water, sugar, butter, sifted cocoa and soda in a saucepan over low heat (without boiling) until sugar dissolves, then simmer for 5 minutes. Transfer to a large bowl and cool.

Step 3Sift flour over cocoa mixture, add eggs and beat with electric mixer until pale in colour. Pour into baking dish.

Step 4Bake uncovered for 50 minutes and allow cake to cool, top side up.

Step 5Fudge frosting: Stir butter, water and caster sugar in a small saucepan over low heat until sugar dissolves.

Step 6Sift icing sugar and cocoa into a small bowl then gradually stir in butter mixture.

Step 7Refrigerate for 20 minutes until thickened. Beat, then spread over cake.
Recipe Notes
The frosting can be made whilst the cake is cooking.
