Ingredients

  • 2 cup water
  • 3 cup caster sugar
  • 250 g butter
  • 1/3 cup cocoa powder
  • 1 tsp bicarbonate of soda
  • 3 cup self-raising flour
  • 4 egg

Fudge Frosting

  • 1/3 cup water
  • 1/2 cup caster sugar
  • 1/3 cup cocoa powder
  • 1 cup icing sugar
  • 90 g butter

Method

  • Step 1
    Preheat oven to 180C and grease and line a 26 x 33 cm baking dish.
  • Step 2
    Stir water, sugar, butter, sifted cocoa and soda in a saucepan over low heat (without boiling) until sugar dissolves, then simmer for 5 minutes. Transfer to a large bowl and cool.
  • Step 3
    Sift flour over cocoa mixture, add eggs and beat with electric mixer until pale in colour. Pour into baking dish.
  • Step 4
    Bake uncovered for 50 minutes and allow cake to cool, top side up.
  • Step 5
    Fudge frosting: Stir butter, water and caster sugar in a small saucepan over low heat until sugar dissolves.
  • Step 6
    Sift icing sugar and cocoa into a small bowl then gradually stir in butter mixture.
  • Step 7
    Refrigerate for 20 minutes until thickened. Beat, then spread over cake.
Recipe Notes
The frosting can be made whilst the cake is cooking.
