Middle-eastern spicy chickpea croquettes.
Ingredients
- 225 g chickpeas drained soaked overnight
- 2 cloves garlic clove crushed
- 2 onion finely chopped medium
- 1 bunch parsley finely chopped
- 1 tsp ground coriander
- 1 tsp ground cumin
- 1/2 tsp ground turmeric
- 1/4 tsp cayenne pepper
- 1/2 tsp baking powder
- 1 pinch salt and pepper
- 1 cup oil
Method

Step 1Cover chickpeas in water and cook for an hour or until soft. Drain and mash to a paste.

Step 2Combine paste with remaining ingredients, except oil and mix well.

Step 3Leave the mixture to rest for 30 minutes and then form into 14-16 balls.

Step 4Deep fry in hot oil until brown and crisp, drain on paper towel.
Recipe Notes
Serve as tasty nibbles, or with spicy tomato relish, and/or garlic sauce stuffed in pita bread.
