Ingredients

  • 225 g chickpeas drained soaked overnight
  • 2 cloves garlic clove crushed
  • 2 onion finely chopped medium
  • 1 bunch parsley finely chopped
  • 1 tsp ground coriander
  • 1 tsp ground cumin
  • 1/2 tsp ground turmeric
  • 1/4 tsp cayenne pepper
  • 1/2 tsp baking powder
  • 1 pinch salt and pepper
  • 1 cup oil

Method

  • Step 1
    Cover chickpeas in water and cook for an hour or until soft. Drain and mash to a paste.
  • Step 2
    Combine paste with remaining ingredients, except oil and mix well.
  • Step 3
    Leave the mixture to rest for 30 minutes and then form into 14-16 balls.
  • Step 4
    Deep fry in hot oil until brown and crisp, drain on paper towel.
Recipe Notes
Serve as tasty nibbles, or with spicy tomato relish, and/or garlic sauce stuffed in pita bread.
