Dark and rich chocolate mousse that is always a crowd pleaser!
Ingredients
- 250 g dark chocolate melts
- 3 eggs
- 1/4 cup caster sugar
- 2 tsp rum optional
- 1 cup cream whipped
Method

Step 1Place the chocolate in a heatproof bowl. Melt chocolate over simmering water on the stove, making sure bowl does not touch the water. Set aside to cool.

Step 2Using an electric mixer, beat the eggs and sugar in a small bowl for 5 minutes, or until thick, pale and increased in volume.

Step 3Beat in the melted chocolate and the dark rum. Using a large metal spoon, gently fold in the cream until the mixture is just combined.

Step 4Spoon the mousse into 4 x 1 cup (250ml) dessert glasses. Refrigerate for 2 hours, or until set.
Recipe Notes
Use a dark rum. Whip the cream gently. I normally make 2 batches and either spoon it into small espresso coffee cups (as it is fairly rich), or put it all into one large bowl so people can spoon out as much as they like. Sometimes the chocolate hardens up when you combine it with the egg & sugar mix, which I believe depends on how long you have left the chocolate to cool (although most people love having a few yummy chocolate chunk surprises!)
