Ingredients

  • 600ml cream
  • 400g dark chocolate
  • 1/8 cup Dutch cocoa

Method

  • Step 1
    Using a bain-marie slowly melt 600ml cream with 400g dark chocolate. Mix with a silicone spatula to ensure there aren’t any lumps of chocolate hiding at the bottom.
  • Step 2
    Remove the bowl from the heat and place it on a tea towel. Give the chocolate another mix until it’s smooth, silky and shiny.
  • Step 3
    Slowly pour the chocolate mixture into a clean bowl and gently place it in the refrigerator for a few hours to firm up.
  • Step 4
    Now if want to eat it as a mousse, sprinkle 1/8 cup of Dutch cocoa over the ganache mixture, and dig in.
